So, I'm kind of tired of typical lunches (sandwiches, fruit, chips, etc.) because it was all I ate while I was studying this summer. I wanted to find something that was easy to prepare, summery, and filling. So I went searching on Cooking Light (one of my favorite magazines/websites) and some of our cookbooks and came up with this lunch that I am currently loving:
- Roasted Veggie Quinoa Salad: I roasted carrots, summer squash, zucchini, and red peppers and mix it with quinoa, feta cheese, rice vinegar, and balsamic vinegar (sometimes I top it with avocado). Also, this makes ALOT.
- Banana Mango Smoothie: mango, banana, milk, honey, dry milk (the secret to the creaminess), and vanilla extract (tastes like a milkshake)
- Snackwell's Devil Food's Cake Cookies: I just love these cookies.
The banana mango smoothie is especially delicious (Charlie doesn't prefer it). I got it from Cooking Light and here's the recipe:
1 banana (fresh or frozen)
1 cup frozen mango (once we run out of mangos, I'm going to try this with strawberries)
2/3 cup milk
1 T nonfat dry milk (optional -- we had some from when Charlie makes homemade hot chocolate mix)
1 t honey
1/4 t vanilla extract
- Combine in blender.
